Review:

My wife and I love many kinds of curries. We either make our own or eat out for curries at least once a month. Rendang style was new to us as was the broad concept of "dry curry." I have since learned that Indonesian style Rendang curries are prepared across a scale ranging from wet and juicy to ultra-dry. Among dry styles, in the very driest form all the moisture in an Indonesian Rendang Curry is absorbed into the hunks of beef, with no remaining sauce for rice to soak up.

I watched and kibitzed as my wife first cut two boneless, skinless chicken breasts (approximately one pound) into one inch cubes, then followed the instructions on the box for beef. The quantity of water to be added was 4/5 cup.

First she cooked the chicken cubes till about 90% done -- sauteed in a frying pan using pan spray. She then set the chicken aside. She next mixed inside the same still hot pan the full content of the two pouches (paste and dried coconut powder) enclosed inside the cardboard box labeled as Ready-to-Cook Sauce Kit for Rendang Curry as well as the recommended 4/5 cup of water. She then mixed it all very thoroughly and without haste into a finished sauce and then added the chicken back into the frying pan. She cooked the whole combined brew for another ten minutes. Then she served us both the Rendang curry over brown rice. My wife added no other ingredients beyond what the instructions on the box called for.

We both enjoyed the resulting product very much. Each of us easily detected and distinguished a variety of delicious ingredients. Striking was the size and texture of some of the larger leaves (which, however, had little detectable flavor). The quantity of sauce that my wife mixed left far more sauce than the chicken absorbed. At table we added, if we cared to, yogurt and shredded coconut.

My wife and I have since tried the warmed up leftover curry twice (adding peas and onions) and it tasted just as good as when first made. There was definitely a "fresh" homemade feel both to the first prepared final mix and, surprisingly, to the leftovers as well. The "heat" from pepper perceived by tongue and palate was toward the low to mid level on any spectrum of hot peppers. I found Rendang curry just a tiny bit sweeter than I prefer. To my wife, however, it was perfect.

There was nothing "dry" about our our curry chicken. But it tasted great! And we look forward to buying more.
